You should decide what style of photographs you would like. Some photographers may be better at traditional photography with posed photographs, whilst others may be talented at natural photography, capturing beautiful moments, sometimes without the subject even knowing. Some photographers may be able to offer you a bit of both. It's important to think about this beforehand because not all photographers will be able to produce the kinds of pictures you want, and they all have their own areas where they are especially talented.

You might just want to order them all, but relatives and guests who are not local may also want to order some prints. Lastly, but most importantly, make sure they travel with back up equipment. Cameras are not easy things to fix, and if something goes wrong it could ruin your day.

Make sure you discuss your needs with them beforehand to make sure they can give you what you want, and don't book anything without checking out their portfolio first. Even when you have decided on someone, confirm because your wedding is your priority, not theirs, and you don't want to be left with no photographer on the day.
